What Are Microgreens?
Microgreens are young seedlings of edible vegetables and herbs harvested less than 14 days after germination. They are usually about 1-3 inches long and come in a rainbow of colors and are packed with nutrition.
Microgreens, like all vegetables, are full of vitamins, minerals, and antioxidants, but studies have shown that microgreens contain more of these vital nutrients than their mature counterparts. So you get more nutrients per flavorful bite! A perk whether it’s for your own plate or trying to sneak healthy food to your toddler.
Did you know vegetables can lose up to 80% of their nutrients within three days of harvest? The nutrients in vegetables are at their peak when harvested, but as soon as they are cut they begin to degrade. The same is true for microgreens. While we offer both pre-cut and living microgreens, if you’re looking for maximum nutrition over convenience consider giving living microgreen trays a try.
